Description

These Slow Cooker Chicken Sloppy Joe Sliders offer a comforting and wholesome twist on a classic favorite. Tender, slow-cooked chicken simmered with tomato sauce, mustard, and a hint of sweetness from dates is served between crispy sweet potato rounds for a hearty and delicious meal perfect for family dinners.

Ingredients

Scale

Chicken Mixture

  • 2 lbs. boneless chicken breast and/or thighs
  • 14 oz. can organic tomato sauce
  • ¼ cup canned organic tomato paste
  • 3 Tbsp. yellow mustard
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. coconut amino
  • 3 pitted dates, finely chopped (optional for touch of sweetness)
  • ¾ cup shredded carrots
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. smoked paprika
  • ¼ tsp. sea salt
  • ¼ tsp. black pepper

Sweet Potato Rounds

  • 2 sweet potatoes, sliced into ¼-inch rounds
  • Avocado oil or olive oil for brushing

Instructions

  1. Prepare the Sweet Potatoes: Preheat the oven to 425 degrees Fahrenheit. Arrange the sweet potato rounds on a baking sheet lined with parchment paper. Brush both sides lightly with avocado or olive oil. Bake for 20 minutes, then flip and bake for an additional 15 minutes until tender and slightly crispy on the edges.
  2. Set Up the Slow Cooker: Place the chicken breasts or thighs at the bottom of the slow cooker. Pour in the tomato sauce and tomato paste, then add yellow mustard, apple cider vinegar, coconut amino, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Stir to combine evenly.
  3. Add the Sweetness and Vegetables: Mix in the finely chopped dates (if using) and shredded carrots into the mixture. These add natural sweetness and extra nutrition to the sloppy joe filling.
  4. Cook the Chicken: Cover the slow cooker and cook on low for 4 hours or until the chicken is fully cooked and tender, easily shredding with a fork.
  5. Shred the Chicken: Using two forks, shred the chicken directly in the slow cooker and stir it well to incorporate all flavors into the sauce.
  6. Assemble the Sliders: To serve, place a generous spoonful of the shredded chicken sloppy joe mixture between two baked sweet potato rounds, creating a slider. Serve warm and enjoy.

Notes

  • This recipe is a healthier alternative to traditional sliders, using sweet potato rounds instead of buns for a gluten-free and nutrient-rich base.
  • For a lower-carb option, serve the sloppy joe mixture in lettuce wraps or over a bed of greens.
  • You can substitute chicken thighs for breasts for more moist and flavorful meat.
  • If you want more spice, add a pinch of cayenne pepper or chili powder to the slow cooker mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
