  2. Cook the Sugar Mixture: In a large, heavy-bottomed saucepan, combine the sugar, sour cream, and remaining 1/4 cup softened butter. Cook over medium heat, stirring frequently until the sugar dissolves. Bring the mixture to a rapid boil and continue cooking for about five minutes or until a candy thermometer reaches 234°F (soft-ball stage). To test, drop a spoonful into cold water; it should form a soft, pliable ball.
  3. Mix in Chocolate and Flavorings: Remove the saucepan from heat and stir in the chopped white baking chocolate, marshmallow cream, and peppermint extract until melted and smooth.
  4. Create the Layers: Pour half of the fudge mixture into the prepared pan. Add five drops of green food coloring to the remaining fudge in the saucepan and stir to combine. Spoon the green mixture over the white layer in the pan.
  5. Marble the Fudge: Using a knife, gently swirl the green and white layers together to create a marbled effect.
  6. Add Sprinkles and Chill: Sprinkle the top with heart sprinkles and refrigerate until firm, about 2 hours.
  7. Cut and Serve: Once set, use the foil overhang to lift the fudge from the pan. Peel away the foil and cut the fudge into 1-inch squares. Serve immediately or store in the refrigerator until ready to enjoy.
